2 large eggs

1/2 cup fresh orange juice

1 tbsp orange zest

1/4 cup milk

1 tsp vanilla extract

Glaze:

1 cup powdered sugar

2 tbsp fresh orange juice

1 tsp honey

1/4 tsp ground ginger (optional)


Instructions

1. Preheat oven to 350°F (175°C) and lightly grease or line a 12-cup muffin tin.

2. In a bowl, whisk together flour, baking powder, baking soda, salt, ginger, and cinnamon.

3. In a large bowl, cream butter, honey, and brown sugar until light and fluffy.

4. Add eggs one at a time, beating after each addition.

5. Mix in orange juice, orange zest, milk, and vanilla extract.

6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

7. Divide batter evenly among muffin cups or small cake molds.

8. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
