1 1/2 tsp baking powder

1/4 tsp salt

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1/2 tsp almond extract

1/2 cup milk

3/4 cup cherry chips

For the Frosting:

1/2 cup unsalted butter, softened

3 cups powdered sugar

23 tbsp milk or heavy cream

1/2 tsp almond extract

Pink food coloring (optional)

Maraschino cherries for garnish (optional)


Instructions

1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.

2. In a medium bowl, whisk together flour, baking powder, and salt.

3. In a large bowl, beat butter and sugar until light and fluffy.

4. Add eggs one at a time, mixing well after each addition.

5. Mix in vanilla and almond extracts.

6. Alternate adding dry ingredients and milk, beginning and ending with dry ingredients, mixing just until combined.

7. Fold in cherry chips gently.

8. Divide batter evenly among cupcake liners, filling each about 2/3 full.

9. Bake for 18–20 minutes, or until a toothpick inserted comes out clean.

10. Cool cupcakes completely before frosting.

11. For the frosting, beat butter until creamy, then add powdered sugar, milk, almond extract, and food coloring if using.

12. Frost cupcakes and garnish with cherries if desired.

Notes
