Ingredients
2 tbsp butter

1 tbsp flour
4 cups vegetable or chicken broth
1/2 cup heavy cream
1/2 cup milk
1 tsp thyme (fresh or dried)
Salt and black pepper to taste
1 tbsp soy sauce (optional, for umami)
Fresh parsley for garnish
Instructions
1. In a large pot, heat butter and olive oil over medium heat.
2. Add onion and garlic; sauté until soft and fragrant.
3. Add mushrooms and cook until golden brown and their moisture evaporates.
4. Sprinkle flour over mushrooms and stir for 1 minute.
5. Gradually add broth while stirring to prevent lumps.
6. Add thyme, salt, pepper, and soy sauce; bring to a simmer.
7. Cook for 10–15 minutes until flavors meld.
8. Stir in milk and cream; heat gently without boiling.
9. Blend half the soup (optional) for a creamier texture, then return to pot.
10. Garnish with parsley and serve hot.
Notes
For a vegan version, use coconut milk instead of cream and olive oil instead of butter.
Add a splash of sherry or white wine for extra depth.
