Ingredients
Cookies:
2 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
3/4 cup unsalted butter, softened
3/4 cup granulated sugar
1/4 cup brown sugar
1 large egg
1 tsp vanilla extract
1/3 cup strawberry jam or strawberry puree
Pink or red food coloring (optional)
Chocolate Coating:
1 1/2 cups semi-sweet chocolate chips
1 tbsp coconut oil or butter
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a bowl, whisk together flour, baking soda, and salt.
3. In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
4. Add egg, vanilla extract, and strawberry jam; mix until combined.
5. Gradually add dry ingredients and mix just until a soft dough forms.
6. Scoop dough onto prepared baking sheets, spacing evenly.
7. Bake for 10–12 minutes until edges are set.
8. Allow cookies to cool completely.
9. Melt chocolate chips with coconut oil until smooth.
10. Dip half of each cookie into melted chocolate and place on parchment.
11. Let chocolate set before serving.
Notes
Chill dough for 20 minutes if it feels too soft.
