Ingredients
2 large sweet potatoes, sliced into 1/2-inch rounds
2 tbsp olive oil
1 tbsp honey
1/2 tsp smoked paprika
Salt and pepper to taste
4 oz burrata cheese
1 tbsp balsamic glaze
1 tbsp chopped fresh basil or thyme
1 tbsp toasted pine nuts (optional)
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. In a bowl, toss sweet potato rounds with olive oil, honey, smoked paprika, salt, and pepper.
3. Arrange in a single layer on the baking sheet and roast for 25–30 minutes, flipping halfway through, until caramelized and tender.
4. Transfer to a serving plate and top each round with a spoonful of burrata.
5. Drizzle with balsamic glaze and sprinkle with fresh herbs and pine nuts if desired.
6. Serve warm as an appetizer or side dish.
