Description

Ingredients
Cupcakes:
1 1/4 cups all-purpose flour
1 tbsp cocoa powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup vegetable oil
3/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1/2 cup buttermilk
1 tsp white vinegar
1 tbsp red food coloring
Cream Cheese Frosting:
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
3 cups powdered sugar
1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
2. In a bowl, whisk flour, cocoa powder, baking soda, and salt.
3. In a separate bowl, whisk oil, sugar, egg, and vanilla until smooth.
4. Mix in buttermilk, vinegar, and red food coloring.
5. Gradually add dry ingredients to wet ingredients, mixing just until combined.
6. Divide batter evenly among cupcake liners, filling about 2/3 full.
7. Bake for 18–20 minutes until a toothpick inserted comes out clean.
8. Cool cupcakes completely before frosting.
9. For frosting, beat cream cheese and butter until smooth.
10. Gradually add powdered sugar and vanilla; beat until fluffy.
11. Frost cupcakes and serve.
Notes
Use gel food coloring for the most vibrant red color.
Do not overmix the batter to keep cupcakes tender.
Cupcakes can be refrigerated for up to 3 days.
Bring to room temperature before serving for best texture.
