Ingredients
2 large sweet potatoes, peeled and sliced into 1/2-inch rounds
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp smoked paprika (optional)

Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Toss sweet potato rounds with olive oil, salt, pepper, and paprika.
3. Arrange in a single layer on the baking sheet.
4. Roast for 25–30 minutes, flipping halfway through, until golden and crisp around the edges.
5. Remove from oven and let cool slightly before topping.
6. Add your favorite toppings and serve warm or at room temperature.
