Ingredients
4 boneless, skinless chicken breasts
2 tablespoons olive oil
2 large onions, thinly sliced
1 tablespoon butter
1 teaspoon fresh thyme (or 1/2 teaspoon dried)
1 cup beef broth
1 tablespoon balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded mozzarella cheese
1/2 cup shredded Gruyère or Swiss cheese
Fresh parsley for garnish
Instructions
1. Preheat oven to 400°F (200°C).
2. In a large oven-safe skillet, heat olive oil over medium heat.
3. Add sliced onions and cook slowly for 15–20 minutes, stirring often, until golden and caramelized.
4. Stir in butter, thyme, balsamic vinegar, salt, and pepper. Cook another 2 minutes.
5. Remove onions and set aside.
6. In the same skillet, sear chicken breasts 2–3 minutes per side until golden.
7. Pour beef broth into the skillet and add caramelized onions back on top of the chicken.
8. Sprinkle cheeses evenly over the top.
9. Transfer skillet to the oven and bake for 20–25 minutes, until cheese is melted and bubbly.
10. Garnish with fresh parsley and serve hot.
