Description
Tender roasted acorn squash brushed with a luscious honey-butter glaze, lightly caramelized and sprinkled with herbs — a gourmet Thanksgiving side that’s as beautiful as it is delicious.
Ingredients
2 small acorn squash, halved and seeded
2 tbsp olive oil
3 tbsp honey
2 tbsp unsalted butter, melted
1/2 tsp cinnamon
1/4 tsp nutmeg
Salt and pepper to taste
1 tbsp chopped fresh thyme or rosemary (optional)
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Cut each acorn squash in half, scoop out seeds, and slice into 1-inch wedges.
3. In a small bowl, whisk together olive oil, melted butter, honey, cinnamon, nutmeg, salt, and pepper.
4. Brush the glaze generously over the squash slices and arrange them cut side up on the baking sheet.
5. Roast for 25–30 minutes, flipping halfway through, until golden and tender.
6. Brush with any remaining glaze and sprinkle with fresh herbs before serving.
Notes
For a richer flavor, drizzle with a touch of balsamic reduction before serving.
Add a sprinkle of toasted pecans or pomegranate seeds for festive flair.
Pairs wonderfully with roasted turkey, ham, or any holiday main course.
