- 1 1/2 cups all-purpose flour
- 1 1/4 tsp baking powder
- 3/4 cup granulated sugar
- 1/2 tsp kosher salt
- 3 cups powdered sugar
- 1/3 cup rainbow sprinkles
- 4 1/2 tsp vanilla extract
- 1 1/4 cup unsalted butter, softened
- 1/4 cup milk
- 1/2 cup whole milk
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- Cream the softened butter and granulated sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
- Prepare the dry ingredients by whisking together the all-purpose flour, baking powder, and kosher salt.
- Combine the wet and dry ingredients alternately with the whole milk, starting and ending with the flour mixture.
- Fold in the rainbow sprinkles gently to avoid breaking them.
- Fill each cupcake liner about two-thirds full with the batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
- Make the frosting by beating the powdered sugar and softened butter, then adding vanilla extract and milk until creamy.
- Frost the cooled cupcakes and add extra sprinkles if desired.
Notes
For best results, use room temperature ingredients and avoid overmixing the batter.
