Delicious and colorful Funfetti cupcakes perfect for any celebration, topped with creamy frosting and rainbow sprinkles.


Ingredients

  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 1/4 tsp baking powder
  • 3/4 cup granulated sugar
  • 1/2 tsp kosher salt
  • 3 cups powdered sugar
  • 1/3 cup rainbow sprinkles
  • 4 1/2 tsp vanilla extract
  • 1 1/4 cup unsalted butter, softened
  • 1/4 cup milk
  • 1/2 cup whole milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. Cream the softened butter and granulated sugar together until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
  4. Prepare the dry ingredients by whisking together the all-purpose flour, baking powder, and kosher salt.
  5. Combine the wet and dry ingredients alternately with the whole milk, starting and ending with the flour mixture.
  6. Fold in the rainbow sprinkles gently to avoid breaking them.
  7. Fill each cupcake liner about two-thirds full with the batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
  10. Make the frosting by beating the powdered sugar and softened butter, then adding vanilla extract and milk until creamy.
  11. Frost the cooled cupcakes and add extra sprinkles if desired.
