  • 1 cup ricotta cheese
  • 1/2 cup spinach, chopped
  • 1/2 cup mozzarella cheese, shredded
  • 2 tablespoons fresh herbs (such as basil or parsley), chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup marinara sauce (optional, for serving)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Add the ricotta cheese to a large mixing bowl, then mix in spinach, mozzarella, and fresh herbs.
  3. Season the mixture with salt and pepper to taste and stir until combined.
  4. Slice each chicken breast horizontally to create a pocket.
  5. Stuff the ricotta mixture into each pocket, securing openings with toothpicks.
  6. Heat olive oil in a skillet over medium-high heat and sear the stuffed chicken rolls for 3-4 minutes on each side.
  7. Transfer the chicken rolls to a baking dish and bake for 25-30 minutes until internal temperature is 165°F (75°C).
  8. Remove from the oven and let rest for a few minutes before serving.

Notes

For garnish, sprinkle fresh herbs over the top and serve with marinara sauce and a side salad.
