- 4 chicken breasts
- 1 cup ricotta cheese
- 1/2 cup spinach, chopped
- 1/2 cup mozzarella cheese, shredded
- 2 tablespoons fresh herbs (such as basil or parsley), chopped
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 cup marinara sauce (optional, for serving)
Instructions
- Preheat your oven to 375°F (190°C).
- Add the ricotta cheese to a large mixing bowl, then mix in spinach, mozzarella, and fresh herbs.
- Season the mixture with salt and pepper to taste and stir until combined.
- Slice each chicken breast horizontally to create a pocket.
- Stuff the ricotta mixture into each pocket, securing openings with toothpicks.
- Heat olive oil in a skillet over medium-high heat and sear the stuffed chicken rolls for 3-4 minutes on each side.
- Transfer the chicken rolls to a baking dish and bake for 25-30 minutes until internal temperature is 165°F (75°C).
- Remove from the oven and let rest for a few minutes before serving.
Notes
For garnish, sprinkle fresh herbs over the top and serve with marinara sauce and a side salad.
