Description

Delicious and nutritious taco stuffed peppers filled with lean meat, beans, and veggies.


Ingredients

  • 4 large bell peppers
  • 1 pound ground turkey or beef
  • 1 cup diced tomatoes
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 tablespoon taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Optional toppings: sour cream, avocado, jalapeños, cilantro

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet over medium heat, cook the ground turkey or beef until browned and crumbled. Drain excess fat.
  4. Add the diced tomatoes, black beans, corn, and taco seasoning to the skillet. Cook for 5 minutes.
  5. Stuff each bell pepper with the meat mixture, packing it down slightly.
  6. Place the stuffed peppers upright in a baking dish, cover with foil, and bake for 25 minutes.
  7. Remove the foil, sprinkle shredded cheese on top, and bake for an additional 10 minutes until the cheese is melted.
  8. Let cool for a few minutes before serving with your favorite toppings.

Notes

These peppers can be customized with various toppings and are great for meal prep. They can also be frozen for longer storage.
