Ingredients

- 1 pound lean ground beef
- 1 cup diced bell peppers (any color)
- 1 cup diced zucchini
- 1 cup diced carrots
- 1 cup chopped spinach
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon oregano
- 1 teaspoon cumin
- Salt and pepper to taste
- Cooked brown rice or quinoa for serving
- Optional toppings: avocado, salsa, or shredded cheese
Instructions
- Prepare the Ingredients: Wash and chop all the vegetables into small pieces.
- Heat the Pan: In a large skillet, heat the olive oil over medium heat.
- Cook the Ground Beef: Add the ground beef to the skillet and cook for about 5-7 minutes until browned. Drain any excess fat.
- Add Veggies and Garlic: Add minced garlic, bell peppers, zucchini, and carrots to the beef. Cook for another 5-7 minutes, stirring occasionally.
- Season the Mixture: Sprinkle in oregano, cumin, salt, and pepper. Cook for another 2-3 minutes until the vegetables are tender.
- Finish with Spinach: Add chopped spinach and cook for an additional 1-2 minutes until wilted.
- Serve: Serve the beef and veggie mixture over cooked brown rice or quinoa. Add optional toppings if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for future meals.
