Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 2 eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the ripe bananas in a medium bowl until smooth.
  3. Add honey or maple syrup, applesauce, eggs, and vanilla extract to the mashed bananas. Mix until well combined.
  4. In a separate bowl, combine whole wheat flour, baking soda, salt, and cinnamon. Mix well.
  5. Gradually add the dry ingredients to the banana mixture, stirring gently until just combined.
  6. Pour the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake for 15-20 minutes, checking for doneness with a toothpick.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.
