- 1.5 lbs boneless skinless chicken thighs (or breasts)
- 2 cups fresh pineapple chunks
- ¼ cup low sodium soy sauce
- ¼ cup pineapple juice
- 2 Tbsp brown sugar
- 1 Tbsp fresh ginger, grated
- 3 cloves garlic, minced
- 1 Tbsp olive oil
- 1 ½ cups jasmine rice, rinsed
- 1 can full-fat coconut milk (13.5 oz)
- ½ cup water
- ½ tsp salt
- Fresh cilantro, for garnish
- Sliced green onions, for garnish
- Lime wedges, for serving
Instructions
- Prepare the Chicken: Heat the olive oil in a large skillet over medium-high heat. Season the chicken lightly with salt and pepper. Add the chicken to the skillet and sear for about 5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
- Cook the Coconut Rice: In a medium saucepan, combine the rinsed jasmine rice, coconut milk, water, and salt. Bring to a boil, reduce heat to low, cover, and simmer for 15–18 minutes until tender. Fluff the rice with a fork.
- Make the Glaze: In the same skillet, add the minced garlic and grated ginger. Sauté for about 1 minute. Stir in soy sauce, pineapple juice, and brown sugar. Simmer until the sauce thickens.
- Combine Chicken and Pineapple: Return the chicken and fresh pineapple to the skillet. Simmer for about 5–7 minutes until the chicken is cooked through and the glaze has thickened.
- Serve: Spoon the coconut rice into bowls, top with glazed chicken and pineapple, and garnish with cilantro, green onions, and lime juice.
Notes
For best flavor, marinate the chicken before cooking. Can be served as a main course or part of a larger meal.
