- 2 large potatoes, diced
- 1 lb ground beef
- 1 cup shredded cheese
- 1 cup fresh tomatoes, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1 tsp taco seasoning
- Salt and pepper to taste
- Oil for frying
Instructions
- Start by heating oil in a skillet over medium heat. You want enough oil to coat the bottom of the pan.
- Add the diced potatoes and spread them out evenly in the skillet.
- Cook the potatoes for about 10-15 minutes or until crispy. Stir occasionally and remove to paper towels when done.
- In another skillet, brown the ground beef over medium heat, breaking it apart as it cooks.
- Once browned, drain any excess fat and add taco seasoning, salt, and pepper. Mix well and cook for 2-3 minutes.
- In a serving bowl, layer the ingredients starting with crispy potatoes, followed by seasoned ground beef.
- Sprinkle shredded cheese on top, allowing it to melt from the heat.
- Garnish with fresh diced tomatoes, chopped cilantro, and lime juice.
- Serve warm and enjoy.
Notes
For extra crunch, serve with tortilla chips or salsa. Customize with jalapeños or sour cream.
