Description

A delicious and satisfying dish combining ground beef and crispy potatoes topped with fresh vegetables.


Ingredients

  • 2 large potatoes, diced
  • 1 lb ground beef
  • 1 cup shredded cheese
  • 1 cup fresh tomatoes, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 tsp taco seasoning
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Start by heating oil in a skillet over medium heat. You want enough oil to coat the bottom of the pan.
  2. Add the diced potatoes and spread them out evenly in the skillet.
  3. Cook the potatoes for about 10-15 minutes or until crispy. Stir occasionally and remove to paper towels when done.
  4. In another skillet, brown the ground beef over medium heat, breaking it apart as it cooks.
  5. Once browned, drain any excess fat and add taco seasoning, salt, and pepper. Mix well and cook for 2-3 minutes.
  6. In a serving bowl, layer the ingredients starting with crispy potatoes, followed by seasoned ground beef.
  7. Sprinkle shredded cheese on top, allowing it to melt from the heat.
  8. Garnish with fresh diced tomatoes, chopped cilantro, and lime juice.
  9. Serve warm and enjoy.

Notes

For extra crunch, serve with tortilla chips or salsa. Customize with jalapeños or sour cream.
