Ingredients

  • 1 tablespoon taco seasoning
  • 2 sweet potatoes, diced
  • 1 cup cottage cheese
  • 23 tablespoons hot honey
  • Salt and pepper to taste
  • Olive oil for roasting

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with olive oil, salt, and pepper until well-coated.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, until fork-tender.
  4. Heat a skillet over medium heat and cook the ground beef until browned.
  5. Stir in taco seasoning until the beef is evenly coated.
  6. Layer the roasted sweet potatoes, seasoned ground beef, and cottage cheese in a bowl.
  7. Drizzle hot honey over the assembled bowl before serving.
