Instructions
- Preheat your grill to medium-high heat.
- Combine the olive oil, garlic powder, salt, and pepper in a medium-sized bowl to create a rub.
- Coat the chicken breasts with the olive oil mixture.
- Place the chicken on the grill and cook for 6-7 minutes on each side, checking for an internal temperature of 165°F.
- Pour salsa verde over the chicken during the last 2 minutes of grilling, then top with shredded Pepper Jack cheese.
- Remove the chicken from the grill and let it rest for a few minutes before serving, garnished with fresh cilantro.
