Ingredients

- 8 ounces mushrooms, sliced
- 1 medium onion, sliced
- 2 tablespoons olive oil
- 4 slices of bread
- 4 ounces Gouda cheese, sliced
- Salt and pepper to taste
Instructions
- In a skillet, heat the olive oil over medium heat. Add the sliced mushrooms and onions. Season with salt and pepper and sauté until softened and golden, about 8-10 minutes.
- Remove the sautéed mushrooms and onions from the skillet and set aside on a plate.
- In the same skillet, place two slices of bread, add a layer of Gouda cheese on each slice, top with sautéed mushrooms and onions, then add another layer of Gouda and finish with the other two slices of bread on top.
- Cook the sandwich on one side until golden brown, about 2-3 minutes, then flip and grill the other side for another 3-4 minutes until golden and cheese is melted.
- Remove the sandwich from the skillet, slice it, and serve warm.
Notes
For best flavor, use fresh ingredients and experiment with different types of bread. Adding herbs like thyme can enhance the taste.
