These Greek Roasted Potatoes with Whipped Feta are a true flavor explosion — golden, crispy potatoes tossed with herbs and lemon, served over a creamy, tangy whipped feta that will make your taste buds dance. The perfect side or star of your Mediterranean feast!
Ingredients
2 lbs baby potatoes, halved
3 tbsp olive oil
1 tsp dried oregano
1/2 tsp garlic powder
Juice and zest of 1 lemon
Salt and black pepper to taste
For the Whipped Feta:
6 oz feta cheese
1/2 cup Greek yogurt
1 tbsp olive oil
1 tsp honey
1 garlic clove (optional)
Fresh dill or parsley for garnish
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Toss halved potatoes with olive oil, oregano, garlic powder, lemon zest, salt, and pepper.
3. Spread evenly on the baking sheet and roast for 35–40 minutes, flipping halfway, until golden and crispy.
4. Meanwhile, make the whipped feta: blend feta, Greek yogurt, olive oil, honey, and garlic (if using) in a food processor until smooth and creamy.
5. Spread the whipped feta onto a serving platter.
6. Top with the hot roasted potatoes and drizzle with fresh lemon juice.
7. Garnish with chopped dill or parsley and serve immediately.
Notes
Add a pinch of chili flakes for heat or drizzle with honey for sweet contrast.
Serve as a side with grilled chicken, lamb, or fish.
For extra crispiness, toss potatoes in a bit of semolina before roasting.
Leftover whipped feta makes a great dip or sandwich spread!
