Description
Crispy-on-the-outside, fluffy-on-the-inside Greek-style roast potatoes tossed in olive oil, lemon juice, herbs, and topped with creamy feta — a zesty Mediterranean side that steals the show!
Ingredients
2 lbs baby potatoes, halved
3 tbsp olive oil
2 tbsp fresh lemon juice
1 tsp lemon zest
2 garlic cloves, minced
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1/4 cup crumbled feta cheese
1 tbsp chopped fresh parsley
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. In a large bowl, toss potatoes with olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
3. Spread potatoes evenly on the baking sheet, cut side down.
4. Roast for 35–40 minutes, flipping halfway through, until golden and crispy.
5. Remove from oven, transfer to a serving bowl, and sprinkle with crumbled feta and parsley.
6. Serve immediately with extra lemon wedges for squeezing.
Notes
Add a pinch of chili flakes for a spicy kick.
Top with Kalamata olives for a more authentic Greek flair.
