- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Lemon slices, for garnish
- Fresh parsley, chopped (optional for garnish)
Instructions
- Prepare the Marinade: In a large bowl, combine the olive oil, fresh lemon juice, minced garlic, oregano, thyme, salt, and pepper. Whisk everything together until well mixed.
- Marinate the Chicken: Place the chicken breasts in the bowl with the marinade. Make sure each piece of chicken is well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, up to 2 hours for better flavor.
- Preheat the Grill or Oven: If grilling, preheat your grill to medium-high heat. If baking, preheat your oven to 400°F (200°C).
- Cook the Chicken:
- Grilling: Take the chicken out of the marinade and shake off any excess. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- Baking: Place the marinated chicken on a baking sheet lined with parchment paper. Bake for approximately 20-25 minutes or until cooked through.
- Rest the Chicken: Once cooked, allow the chicken to rest for 5 minutes to help the juices redistribute.
- Serve and Garnish: Slice the chicken if desired and serve on a plate. Garnish with lemon slices and chopped fresh parsley.

Use fresh ingredients for the best flavor. Don’t overcook the chicken to avoid dryness.
