- 4 boneless skinless chicken thighs
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1 cup orzo pasta
- 2 cups chicken broth
- 3 tablespoons lemon juice
- 1 tablespoon lemon zest
- Salt to taste
- Freshly ground black pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Season the chicken thighs generously on both sides with salt and pepper.
- Cook the chicken thighs in a large skillet with olive oil over medium-high heat for about 4 to 5 minutes on each side until golden brown. Remove and set aside.
- Sauté the chopped onion in the same skillet for about 3 to 4 minutes until softened.
- Add the minced garlic, dried oregano, and dried thyme. Cook for about 1 minute.
- Combine the orzo pasta, chicken broth, lemon juice, and lemon zest. Stir well.
- Simmer with the chicken, covered, on low heat for 15 to 20 minutes until the orzo is cooked through.
- Finish the dish by removing the chicken, slicing or shredding it, and stirring it back into the orzo with parsley.
- Adjust the seasoning with more salt and pepper before serving warm.
Notes
Serve warm, garnished with parsley. Pairs well with a Greek salad or crusty bread.
