A delightful one-pot dish featuring tender chicken thighs, zesty lemon, and savory orzo pasta.


Ingredients

  • 4 boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 3 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the chicken thighs generously on both sides with salt and pepper.
  2. Cook the chicken thighs in a large skillet with olive oil over medium-high heat for about 4 to 5 minutes on each side until golden brown. Remove and set aside.
  3. Sauté the chopped onion in the same skillet for about 3 to 4 minutes until softened.
  4. Add the minced garlic, dried oregano, and dried thyme. Cook for about 1 minute.
  5. Combine the orzo pasta, chicken broth, lemon juice, and lemon zest. Stir well.
  6. Simmer with the chicken, covered, on low heat for 15 to 20 minutes until the orzo is cooked through.
  7. Finish the dish by removing the chicken, slicing or shredding it, and stirring it back into the orzo with parsley.
  8. Adjust the seasoning with more salt and pepper before serving warm.

Notes

Serve warm, garnished with parsley. Pairs well with a Greek salad or crusty bread.
