Instructions
- Prepare the chicken: Start by heating olive oil in a large pot over medium heat. Season the chicken breasts generously with salt and pepper on both sides.
- Brown the chicken: Add the seasoned chicken breasts to the pot and cook for about 5-7 minutes on each side until browned and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).
- Remove the chicken from the pot and set aside on a plate.
- Sauté the garlic: Add minced garlic to the same pot and sauté for about 30 seconds until fragrant.
- Toast the orzo: Add orzo to the pot with the garlic and stir well. Cook for 2-3 minutes until lightly toasted.
- Add chicken broth and lemon juice: Carefully pour in chicken broth and lemon juice, stirring to combine.
- Simmer with chicken: Return browned chicken to the pot, submerging it in the liquid. Reduce heat to low, cover, and simmer for 15-20 minutes until the orzo is tender.
- Finish with fresh herbs: Remove from heat and stir in chopped fresh herbs before serving.
Notes
