- 2 Chicken breasts
- 3 tablespoons Olive oil
- 2 cloves Garlic, minced
- 2 tablespoons Lemon juice
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 Cucumber, diced
- 2 Tomatoes, diced
- 1 Red onion, sliced
- 1/2 cup Feta cheese, crumbled
- Fresh parsley, for garnish
- 2 cups Cooked quinoa or rice
- For tzatziki sauce:
- 1 cup Plain yogurt
- 1/2 Cucumber, grated
- 1 clove Garlic, minced
- 2 tablespoons Lemon juice
- 1 tablespoon Dill, chopped
Instructions
- Marinate chicken breast in olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.
- Grill or bake the chicken until cooked through, then slice it.
- Prepare the tzatziki sauce by mixing yogurt, grated cucumber, minced garlic, lemon juice, and dill.
- Assemble the bowls by placing cooked quinoa or rice at the bottom, adding sliced chicken, fresh veggies, and a dollop of tzatziki sauce on top.
- Garnish with feta cheese and fresh parsley. Serve immediately.
Notes
You can store any leftovers in an airtight container in the refrigerator for 3-4 days. Keep the tzatziki sauce separate until you’re ready to serve.
