Description

A delicious and healthy option that combines marinated chicken, fresh vegetables, and tzatziki sauce, perfect for lunch or dinner.


Ingredients

  • 2 Chicken breasts
  • 3 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 2 tablespoons Lemon juice
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 Cucumber, diced
  • 2 Tomatoes, diced
  • 1 Red onion, sliced
  • 1/2 cup Feta cheese, crumbled
  • Fresh parsley, for garnish
  • 2 cups Cooked quinoa or rice
  • For tzatziki sauce:
    • 1 cup Plain yogurt
    • 1/2 Cucumber, grated
    • 1 clove Garlic, minced
    • 2 tablespoons Lemon juice
    • 1 tablespoon Dill, chopped

Instructions

  1. Marinate chicken breast in olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.
  2. Grill or bake the chicken until cooked through, then slice it.
  3. Prepare the tzatziki sauce by mixing yogurt, grated cucumber, minced garlic, lemon juice, and dill.
  4. Assemble the bowls by placing cooked quinoa or rice at the bottom, adding sliced chicken, fresh veggies, and a dollop of tzatziki sauce on top.
  5. Garnish with feta cheese and fresh parsley. Serve immediately.

Notes

You can store any leftovers in an airtight container in the refrigerator for 3-4 days. Keep the tzatziki sauce separate until you’re ready to serve.
