- 2 chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon oregano
- Salt and pepper to taste
- 1 cup cooked quinoa or rice
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, sliced
- 1/2 cup Kalamata olives, pitted
- Feta cheese, crumbled
- Tzatziki sauce (optional)
Instructions
- Preheat your grill or oven to medium-high heat.
- Brush the chicken breasts with olive oil and sprinkle with oregano, salt, and pepper.
- Cook the chicken on the grill or in the oven for about 6 to 7 minutes on each side until the internal temperature reaches 165°F (75°C).
- Once cooked, let the chicken rest for a few minutes.
- In a large bowl, place the cooked quinoa or rice at the bottom.
- Slice the rested chicken into strips and lay it on top of the quinoa or rice.
- Add diced cucumber, halved cherry tomatoes, sliced red onion, Kalamata olives, and crumbled feta cheese on top of the chicken.
- Drizzle with tzatziki sauce, if desired.
- Serve immediately and enjoy.
Notes
For added flavor, marinate the chicken in olive oil, lemon juice, and oregano ahead of time. Store leftovers in separate airtight containers.
