Ingredients

  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup cooked quinoa or rice
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, sliced
  • 1/2 cup Kalamata olives, pitted
  • Feta cheese, crumbled
  • Tzatziki sauce (optional)

Instructions

  1. Preheat your grill or oven to medium-high heat.
  2. Brush the chicken breasts with olive oil and sprinkle with oregano, salt, and pepper.
  3. Cook the chicken on the grill or in the oven for about 6 to 7 minutes on each side until the internal temperature reaches 165°F (75°C).
  4. Once cooked, let the chicken rest for a few minutes.
  5. In a large bowl, place the cooked quinoa or rice at the bottom.
  6. Slice the rested chicken into strips and lay it on top of the quinoa or rice.
  7. Add diced cucumber, halved cherry tomatoes, sliced red onion, Kalamata olives, and crumbled feta cheese on top of the chicken.
  8. Drizzle with tzatziki sauce, if desired.
  9. Serve immediately and enjoy.

Notes

For added flavor, marinate the chicken in olive oil, lemon juice, and oregano ahead of time. Store leftovers in separate airtight containers.
