A refreshing and nutritious grain and celery salad with a homemade apple cider vinaigrette, perfect for lunch or as a side dish.
Ingredients

- 1 cup cooked grains (quinoa, farro, or brown rice)
- 2 cups chopped celery
- 1/4 cup diced red onion
- 1/2 cup chopped parsley
- 1/2 cup diced apples
- 1/4 cup walnuts or pecans, chopped
- 1/4 cup apple cider vinegar
- 2 tablespoons olive oil
- 1 teaspoon honey or maple syrup
- Salt and pepper to taste
Instructions
- Start by cooking your choice of grains. Follow the package instructions and let them cool to room temperature.
- In a large bowl, combine the cooked grains, chopped celery, diced red onion, parsley, diced apples, and chopped nuts.
- In a small bowl, whisk together the apple cider vinegar, olive oil, honey or maple syrup, and a pinch of salt and pepper.
- Pour the dressing over the salad and toss everything together gently.
- Serve it immediately or refrigerate for up to 3 days, tossing again before serving.
