Ingredients

- 2 slices of bread
- 2 tablespoons butter
- 1/2 cup ricotta cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach
- Salt and pepper to taste
Instructions
- Spread butter on one side of each slice of bread.
- In a bowl, mix ricotta cheese, sun-dried tomatoes, and fresh spinach. Season with salt and pepper.
- Take one slice of bread (butter side down) and spread the ricotta mixture on the unbuttered side. Top with the second slice of bread (butter side up).
- Heat a skillet over medium heat and cook the sandwich for about 3-4 minutes on each side until golden brown and crispy.
- Remove from skillet, let sit for a minute, slice, and serve.
Notes
Serve with a side salad or tomato soup for a complete meal. Refrigerate leftovers for up to two days or freeze for about a month.
