Description

A delightful twist on the classic grilled cheese, featuring creamy ricotta, tangy sun-dried tomatoes, and fresh spinach.


Ingredients

  • 2 slices of bread
  • 2 tablespoons butter
  • 1/2 cup ricotta cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • Salt and pepper to taste

Instructions

  1. Spread butter on one side of each slice of bread.
  2. In a bowl, mix ricotta cheese, sun-dried tomatoes, and fresh spinach. Season with salt and pepper.
  3. Take one slice of bread (butter side down) and spread the ricotta mixture on the unbuttered side. Top with the second slice of bread (butter side up).
  4. Heat a skillet over medium heat and cook the sandwich for about 3-4 minutes on each side until golden brown and crispy.
  5. Remove from skillet, let sit for a minute, slice, and serve.

Notes

Serve with a side salad or tomato soup for a complete meal. Refrigerate leftovers for up to two days or freeze for about a month.
