  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 cup chocolate chips
  • 1/4 cup walnuts, chopped
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Add rolled oats, almond flour, maple syrup, vanilla extract, baking soda, and salt to the bananas; mix until well combined.
  4. Fold in the chocolate chips and chopped walnuts.
  5. Line a baking sheet with parchment paper.
  6. Drop spoonfuls of cookie dough onto the baking sheet, leaving space between each cookie.
  7. Bake for 12-15 minutes until the edges are golden brown.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Use overripe bananas for extra sweetness. Feel free to adjust the sweetness with more maple syrup if desired.
