Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Wash the baby potatoes thoroughly and cut them in half.
  2. Mince the garlic cloves finely.
  3. Rub the chicken breasts with olive oil and season with Italian seasoning, salt, black pepper, and red pepper flakes.
  4. Place halved potatoes at the bottom of the crockpot.
  5. Lay the seasoned chicken breasts on top of the potatoes.
  6. Pour chicken broth over the chicken and potatoes.
  7. Sprinkle minced garlic and parmesan cheese over the chicken.
  8. Cover the crockpot and cook on low for 6–7 hours or high for 3–4 hours.
  9. Use a meat thermometer to check the chicken’s internal temperature.
  10. Carefully remove chicken and potatoes from the crockpot and spoon remaining sauce over the top.
  11. Garnish with chopped parsley before serving.

Choose quality chicken for the best taste. You may sear the chicken before slow cooking for added flavor.
