Description

A hearty and flavorful dish featuring tender chicken and crispy potatoes coated in rich garlic Parmesan.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 cups baby potatoes, halved
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the olive oil, minced garlic, Italian seasoning, salt, and pepper. Stir well.
  3. Add the chicken breasts to the bowl and toss to coat.
  4. Arrange the chicken on one side of a large baking sheet.
  5. Add the halved baby potatoes to the same bowl and toss to coat.
  6. Arrange the potatoes on the other side of the baking sheet.
  7. Sprinkle the Parmesan cheese over both the chicken and potatoes.
  8. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are tender.
  9. Garnish with fresh parsley before serving.

Notes

Use fresh garlic for enhanced flavor. Don’t crowd the pan for proper roasting.
