- 4 boneless, skinless chicken breasts
- 4 cups baby potatoes, halved
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the olive oil, minced garlic, Italian seasoning, salt, and pepper. Stir well.
- Add the chicken breasts to the bowl and toss to coat.
- Arrange the chicken on one side of a large baking sheet.
- Add the halved baby potatoes to the same bowl and toss to coat.
- Arrange the potatoes on the other side of the baking sheet.
- Sprinkle the Parmesan cheese over both the chicken and potatoes.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are tender.
- Garnish with fresh parsley before serving.
Notes
Use fresh garlic for enhanced flavor. Don’t crowd the pan for proper roasting.
