Ingredients

  • 4 medium potatoes, diced
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the diced potatoes with olive oil, minced garlic, Italian seasoning, salt, and pepper. Toss until well coated.
  3. Arrange the seasoned potatoes in a single layer on a baking sheet.
  4. Season the chicken with salt, pepper, and half of the Parmesan cheese.
  5. Place the chicken on the baking sheet with the potatoes.
  6. Sprinkle the remaining Parmesan cheese over the chicken and potatoes.
  7. Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the potatoes are golden and crispy.
  8. Garnish with chopped parsley before serving.
