- 4 chicken thighs or breasts
- 4 medium potatoes, diced
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup grated Parmesan cheese

Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the diced potatoes with olive oil, minced garlic, Italian seasoning, salt, and pepper. Toss until well coated.
- Arrange the seasoned potatoes in a single layer on a baking sheet.
- Season the chicken with salt, pepper, and half of the Parmesan cheese.
- Place the chicken on the baking sheet with the potatoes.
- Sprinkle the remaining Parmesan cheese over the chicken and potatoes.
- Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the potatoes are golden and crispy.
- Garnish with chopped parsley before serving.
