Description

Frog Eye Salad is a unique dessert salad that blends fruity flavors with a creamy texture, perfect for any gathering or potluck.


Ingredients

  • 1 cup Acini di Pepe pasta
  • 1 can (15 oz) pineapple chunks, drained
  • 1 can (15 oz) mandarin oranges, drained
  • 1 cup mini marshmallows
  • 1 cup Cool Whip
  • 1/2 cup shredded coconut
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup sweetened condensed milk
  • 1/2 cup fruit cocktail, drained

Instructions

  1. Cook the Acini di Pepe pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine the pasta with pineapple, mandarin oranges, mini marshmallows, coconut, and optional nuts.
  3. In another bowl, mix Cool Whip and sweetened condensed milk until smooth.
  4. Gently fold the creamy mixture into the pasta and fruit mixture.
  5. Cover and chill the salad in the refrigerator for at least 1 hour.
  6. Serve cold and garnish with additional coconut or fresh fruit if desired.

Notes

Best served chilled. Can be made a day in advance for enhanced flavor.
