Frog Eye Salad is a unique dessert salad that blends fruity flavors with a creamy texture, perfect for any gathering or potluck.
Ingredients

- 1 cup Acini di Pepe pasta
- 1 can (15 oz) pineapple chunks, drained
- 1 can (15 oz) mandarin oranges, drained
- 1 cup mini marshmallows
- 1 cup Cool Whip
- 1/2 cup shredded coconut
- 1/2 cup chopped nuts (optional)
- 1/2 cup sweetened condensed milk
- 1/2 cup fruit cocktail, drained
Instructions
- Cook the Acini di Pepe pasta according to package instructions until al dente. Drain and rinse under cold water.
- In a large bowl, combine the pasta with pineapple, mandarin oranges, mini marshmallows, coconut, and optional nuts.
- In another bowl, mix Cool Whip and sweetened condensed milk until smooth.
- Gently fold the creamy mixture into the pasta and fruit mixture.
- Cover and chill the salad in the refrigerator for at least 1 hour.
- Serve cold and garnish with additional coconut or fresh fruit if desired.
Notes
Best served chilled. Can be made a day in advance for enhanced flavor.
