Ingredients

- 1 lb shrimp (fresh, peeled and deveined)
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 1 tsp Old Bay seasoning
- 8 cups water
- 1 tbsp fresh lemon juice
- 1/2 cup celery (diced)
- 1/4 cup red onion (diced)
- 1/4 cup fresh dill (minced)
- 1/2 cup mayonnaise
- 1 tsp celery seed (optional)
- 1 tbsp Dijon mustard
- Salt and pepper to taste
Instructions
- Prepare the shrimp by tossing them with baking soda, kosher salt, and Old Bay seasoning, allowing them to soak for 15-20 minutes.
- Fill a bowl with ice water and set aside for chilling the shrimp after cooking.
- Bring 8 cups of water mixed with lemon juice to a boil in a large pot.
- Carefully add the seasoned shrimp to the boiling water and cook for about 90 seconds until slightly opaque and pink.
- Transfer the cooked shrimp to the ice water bath to cool quickly.
- Drain the shrimp and pat them dry with paper towels.
- Combine the diced celery, red onion, dill, mayonnaise, celery seed, lemon juice, and salt and pepper in a mixing bowl.
- Add the chilled shrimp to the dressing mixture and gently toss until coated.
- Cover the salad and refrigerate for at least 2 hours, preferably overnight.
- Drain the salad for excess moisture before serving, if desired.
Notes
For a creamier texture, consider adding diced avocado or other crunchy vegetables like bell peppers or cucumbers.
