Ingredients

- 8 oz pasta (penne or fettuccine)
- 2 chicken breasts, diced
- 2 tablespoons olive oil
- 1 bell pepper, sliced
- 1 zucchini, chopped
- 1 cup cherry tomatoes, halved
- 1 cup broccoli florets
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for serving
- Fresh basil for garnish
Instructions
- Cook the pasta by boiling water in a large pot. Add your chosen pasta and cook according to package instructions. Drain and set aside.
- Cook the chicken in a large skillet with olive oil over medium heat for 5-7 minutes until browned and fully cooked.
- Add garlic to the skillet and cook for another minute until fragrant.
- Sauté the vegetables (bell pepper, zucchini, broccoli) for 5-7 minutes until tender.
- Combine everything by adding cherry tomatoes and cooked pasta. Season with salt and pepper to taste.
- Serve warm, topped with Parmesan cheese and fresh basil.
Notes
Feel free to customize the vegetables or make it vegetarian by omitting chicken and adding extra veggies or tofu.
