A delightful dish combining tender chicken and vibrant vegetables with your favorite pasta.


Ingredients

  • 8 oz pasta (penne or fettuccine)
  • 2 chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 bell pepper, sliced
  • 1 zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving
  • Fresh basil for garnish

Instructions

  1. Cook the pasta by boiling water in a large pot. Add your chosen pasta and cook according to package instructions. Drain and set aside.
  2. Cook the chicken in a large skillet with olive oil over medium heat for 5-7 minutes until browned and fully cooked.
  3. Add garlic to the skillet and cook for another minute until fragrant.
  4. Sauté the vegetables (bell pepper, zucchini, broccoli) for 5-7 minutes until tender.
  5. Combine everything by adding cherry tomatoes and cooked pasta. Season with salt and pepper to taste.
  6. Serve warm, topped with Parmesan cheese and fresh basil.

Notes

Feel free to customize the vegetables or make it vegetarian by omitting chicken and adding extra veggies or tofu.
