Description

Delicious and customizable freezer breakfast burritos, perfect for quick and easy mornings.


Ingredients

  • 12 large eggs
  • 1/2 cup milk
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 (10-inch) flour tortillas
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, crack the eggs and add milk, salt, and pepper. Whisk until well combined.
  2. Heat a non-stick skillet over medium heat and add vegetable oil. Pour in the egg mixture and cook, stirring occasionally, until set but slightly moist (about 5-7 minutes). Remove from heat.
  3. Warm the tortillas in the microwave for 10-15 seconds or on a dry skillet for a few seconds on each side.
  4. Take a warm tortilla, add a portion of scrambled eggs, crumbled breakfast sausage, and both cheeses in the center.
  5. Fold the sides of the tortilla inward and roll tightly from the bottom to the top to wrap the burrito.
  6. Wrap each burrito individually in plastic wrap, then cover with aluminum foil for added protection.
  7. Store the wrapped burritos in a freezer-safe bag or container, labeling with the date prepared.
  8. To reheat, unwrap the burrito, rewrap it in a damp paper towel, and microwave on high for 1-2 minutes, making sure it’s heated through.
