- 12 large eggs
- 1/2 cup milk
- 1 pound breakfast sausage, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 12 (10-inch) flour tortillas
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- In a large mixing bowl, crack the eggs and add milk, salt, and pepper. Whisk until well combined.
- Heat a non-stick skillet over medium heat and add vegetable oil. Pour in the egg mixture and cook, stirring occasionally, until set but slightly moist (about 5-7 minutes). Remove from heat.
- Warm the tortillas in the microwave for 10-15 seconds or on a dry skillet for a few seconds on each side.
- Take a warm tortilla, add a portion of scrambled eggs, crumbled breakfast sausage, and both cheeses in the center.
- Fold the sides of the tortilla inward and roll tightly from the bottom to the top to wrap the burrito.
- Wrap each burrito individually in plastic wrap, then cover with aluminum foil for added protection.
- Store the wrapped burritos in a freezer-safe bag or container, labeling with the date prepared.
- To reheat, unwrap the burrito, rewrap it in a damp paper towel, and microwave on high for 1-2 minutes, making sure it’s heated through.
