Description

A quick and flavorful fried rice recipe that’s perfect for using up leftover rice and assorted vegetables.


Ingredients

  • 4 cups cooked rice (day-old preferred)
  • 3 large eggs (whisked)
  • 3 tablespoons soy sauce (adjust to taste)
  • 2 tablespoons vegetable oil (or sesame oil)
  • 2 cups mixed vegetables (peas, carrots, corn)
  • 2 cloves garlic (minced, optional)
  • 1 inch ginger (minced, optional)
  • 2 stalks green onions (sliced, optional)

Instructions

  1. Prepare the Skillet: Start by pouring 2 tablespoons of vegetable oil into a large skillet. Set the heat to medium and wait until the oil shimmers, which should take about 1 minute.
  2. Scramble the Eggs: While the oil heats up, take a bowl and whisk the 3 large eggs until they are fluffy. Carefully add the whisked eggs to the skillet. Stir gently as they cook until fully set and soft, which should take around 2-3 minutes. Once cooked, transfer the eggs to a plate to cool.
  3. Sauté the Aromatics: Using the same skillet where you scrambled the eggs, add 2 minced cloves of garlic and 1 inch of minced ginger if you decide to use them. Sauté these for about 1 minute or until fragrant.
  4. Cook the Vegetables: Toss in 2 cups of mixed vegetables such as peas, carrots, and corn. Stir-fry these veggies for about 3-4 minutes.
  5. Add Rice and Soy Sauce: Add in 4 cups of cooked rice and pour in 3 tablespoons of soy sauce. Mix everything thoroughly.
  6. Combine Everything: Gently fold in the scrambled eggs and 2 sliced green onions into the rice mixture. Mix for an additional 1-2 minutes.

Notes

Use day-old rice for the best texture and feel free to customize vegetables according to your preference.
