Ingredients
1 lb ground beef or shredded chicken
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 can (10 oz) enchilada sauce (red or green)
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels (fresh, frozen, or canned)
8 small corn tortillas, cut into halves
2 cups shredded cheddar or Mexican blend cheese
1 tsp chili powder
1/2 tsp cumin
Salt and pepper to taste
Fresh cilantro and sour cream for garnish
Instructions
1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
2. In a skillet, heat olive oil over medium heat. Add onion and garlic; sauté until fragrant.
3. Add ground beef, chili powder, cumin, salt, and pepper; cook until browned.
4. Stir in black beans, corn, and half of the enchilada sauce.
5. Spread a thin layer of enchilada sauce on the bottom of the baking dish.
6. Layer tortillas, meat mixture, cheese, and sauce — repeating until all ingredients are used.
7. Top with remaining cheese and sauce.
8. Cover with foil and bake for 20 minutes; remove foil and bake another 10 minutes until bubbly.
9. Garnish with cilantro and serve with sour cream.
