Ingredients

  • 1 pound Italian sausage
  • 1 package tortellini (about 9 ounces)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes (14.5 ounces)
  • 2 cups spinach
  • Salt and pepper to taste
  • Olive oil
  • Parmesan cheese (optional, for serving)

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onion and minced garlic. Sauté until soft and fragrant, about 3-4 minutes.
  2. Add the Italian sausage, breaking it apart with a spoon as you cook. Stir until browned and fully cooked, about 5-6 minutes.
  3. Pour in the chicken broth and diced tomatoes. Bring to a gentle simmer.
  4. Stir in the tortellini and cook for about 5-7 minutes until tender and al dente.
  5. Add the spinach and cook until wilted, about 2 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, with optional Parmesan cheese on top.

Notes
