Description
A delicious and simple homemade version of the classic Panda Express Mushroom Chicken, packed with flavor, chicken, and fresh vegetables.

- 1 lb chicken breast (boneless skinless, thinly sliced)
- 2 cups mushrooms (cleaned and quartered)
- 1 large zucchini (sliced)
- 3 cloves garlic (minced)
- 1 teaspoon ginger (minced)
- 1/4 cup soy sauce (light)
- 2 tablespoons rice vinegar
- 2 tablespoons vegetable oil
- 1/2 cup water
- 2 tablespoons oyster sauce
- 2 teaspoons brown sugar
- 1 tablespoon cornstarch
Instructions
- Marinate the chicken: In a bowl, whisk together soy sauce, rice vinegar, and cornstarch, add chicken, toss, and let marinate for at least 20 minutes.
- Prepare the sauce: Combine water, soy sauce, oyster sauce, rice vinegar, brown sugar, and cornstarch in another bowl, whisk until smooth.
- Cook the chicken: Heat vegetable oil in a skillet, add marinated chicken, and sauté for 5-7 minutes until cooked through.
- Stir-fry the vegetables: In the same skillet, add mushrooms and zucchini, stir-fry for 3-4 minutes until tender.
- Add garlic and ginger: Stir in minced garlic and ginger, cooking for another minute until fragrant.
- Combine everything: Pour sauce over chicken and vegetables, stir well, and cook for another 2-3 minutes until sauce thickens.
- Serve: Serve over rice or noodles, garnished with sesame seeds or green onions if desired.
Notes
Marinating overnight for more flavor is recommended. Adjust seasoning to taste.
