Description

A warm, comforting, and nutritious butternut squash soup that is easy to prepare and perfect for any meal.


Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Optional toppings: roasted pumpkin seeds, sour cream, or herbs

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for about 3–5 minutes until the onion is softened and translucent.
  2. Add the cubed butternut squash and pour in the vegetable broth. Stir to combine and bring to a boil.
  3. Once it boils, reduce the heat to low and let it simmer for about 20 minutes, until the squash is tender.
  4. Use an immersion blender to puree the soup until smooth, or transfer to a countertop blender in batches.
  5. Season with salt and pepper to taste. Serve warm and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
