- 1.5 lbs lean ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1.5 cups frozen mixed vegetables
- 2 tbsp all-purpose flour
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried parsley
- 2 lbs potatoes (Russet or Yukon Gold), peeled and cubed
- 4 tbsp butter
- 0.25 cup milk
- 1 cup sharp cheddar cheese, shredded
- Salt and pepper to taste
Instructions
- Prepare the potatoes: Peel and cube the potatoes. Place them in a pot of salted water and bring it to a boil. Let them cook for about 15 minutes or until soft. Drain and return to the pot.
- Mash the potatoes: While warm, add butter, milk, and half of the cheddar cheese. Mash until smooth, season with salt and pepper, and set aside.
- Cook the beef mixture: In a skillet, cook the ground beef over medium heat until browned, adding chopped onion until translucent. Drain excess grease.
- Add flavor and thicken: Stir in minced garlic and cook for another minute. Sprinkle flour over the mixture, stir well, then gradually pour in beef broth and Worcestershire sauce, stirring until smooth and thickened.
- Incorporate vegetables: Add frozen mixed vegetables and dried parsley, simmer for 5-7 minutes until combined and thickened.
- Preheat the oven: Preheat to 400°F (200°C).
- Assemble the Shepherd’s Pie: Spread beef mixture in a baking dish, top with mashed potatoes, and sprinkle remaining cheese over the top.
- Bake: Place in oven and bake for about 20 minutes until cheese is melted and edges are golden brown.
- Cool and serve: Let cool for a few minutes before serving to set the filling.
Notes
Serve with a side salad or crispy bread. For extra coziness, add a dollop of sour cream or a drizzle of gravy on top.
