Ingredients

  • 1.5 lbs lean ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1.5 cups frozen mixed vegetables
  • 2 tbsp all-purpose flour
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried parsley
  • 2 lbs potatoes (Russet or Yukon Gold), peeled and cubed
  • 4 tbsp butter
  • 0.25 cup milk
  • 1 cup sharp cheddar cheese, shredded
  • Salt and pepper to taste

Instructions

  1. Prepare the potatoes: Peel and cube the potatoes. Place them in a pot of salted water and bring it to a boil. Let them cook for about 15 minutes or until soft. Drain and return to the pot.
  2. Mash the potatoes: While warm, add butter, milk, and half of the cheddar cheese. Mash until smooth, season with salt and pepper, and set aside.
  3. Cook the beef mixture: In a skillet, cook the ground beef over medium heat until browned, adding chopped onion until translucent. Drain excess grease.
  4. Add flavor and thicken: Stir in minced garlic and cook for another minute. Sprinkle flour over the mixture, stir well, then gradually pour in beef broth and Worcestershire sauce, stirring until smooth and thickened.
  5. Incorporate vegetables: Add frozen mixed vegetables and dried parsley, simmer for 5-7 minutes until combined and thickened.
  6. Preheat the oven: Preheat to 400°F (200°C).
  7. Assemble the Shepherd’s Pie: Spread beef mixture in a baking dish, top with mashed potatoes, and sprinkle remaining cheese over the top.
  8. Bake: Place in oven and bake for about 20 minutes until cheese is melted and edges are golden brown.
  9. Cool and serve: Let cool for a few minutes before serving to set the filling.

Notes

Serve with a side salad or crispy bread. For extra coziness, add a dollop of sour cream or a drizzle of gravy on top.
