- 8 small corn tortillas
- 1 cup shredded cabbage
- ½ cup diced tomatoes
- ¼ cup fresh cilantro (chopped)
- Lime wedges for serving
Instructions
- Prepare the shrimp: Start by placing the peeled and deveined shrimp in a mixing bowl. Drizzle the olive oil over the shrimp. Then, add the chili powder, cumin, garlic powder, salt, and pepper. Use a spoon to toss the shrimp gently, ensuring they are evenly coated with the spices and oil.
- Preheat the grill: Now, it’s time to get your grill ready. Preheat your grill to medium-high heat.
- Skewer the shrimp: For easier handling on the grill, thread the shrimp onto skewers.
- Grill the shrimp: Place the skewered shrimp on the grill. Grill them for about 2-3 minutes on each side.
- Warm the tortillas: While the shrimp are grilling, warm the corn tortillas on the grill for about 30 seconds on each side.
- Assemble the tacos: Once the shrimp are done, remove them from the skewers and place them on the warm tortillas.
- Top with fresh ingredients: Add a handful of shredded cabbage, diced tomatoes, and fresh chopped cilantro on top of each taco.
- Serve the tacos with fresh lime wedges. Squeeze lime over the toppings for extra flavor.
