Description

A delightful Mediterranean salad combining fresh vegetables, olives, and feta cheese with pasta for a fulfilling meal.


Ingredients

  • 8 oz Bowtie pasta
  • 1 Cup Cucumbers, chopped
  • 1/2 Cup Kalamata olives, sliced
  • 1 Cup Cherry tomatoes, halved
  • 1/4 Cup Red onion, diced
  • 1/2 Cup Feta cheese, crumbled
  • 1/4 Cup Olive oil
  • 2 tbsp Lemon juice
  • 1 tsp Oregano
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Cook the pasta according to package instructions until al dente, then drain and cool.
  2. Combine cooled pasta with chopped cucumbers, sliced olives, halved tomatoes, diced onion, and crumbled feta in a large bowl.
  3. Whisk together olive oil, lemon juice, oregano, salt, and pepper in a small bowl to make the dressing.
  4. Pour the dressing over the salad mixture and toss gently to coat.
  5. Chill in the refrigerator for 30 minutes before serving.

Notes

For extra crunch, add toasted pine nuts or sunflower seeds. Keep cucumbers separate if storing leftovers longer than a day to maintain crispness.
