A delightful Mediterranean salad combining fresh vegetables, olives, and feta cheese with pasta for a fulfilling meal.
Ingredients

- 8 oz Bowtie pasta
- 1 Cup Cucumbers, chopped
- 1/2 Cup Kalamata olives, sliced
- 1 Cup Cherry tomatoes, halved
- 1/4 Cup Red onion, diced
- 1/2 Cup Feta cheese, crumbled
- 1/4 Cup Olive oil
- 2 tbsp Lemon juice
- 1 tsp Oregano
- Salt, to taste
- Pepper, to taste
Instructions
- Cook the pasta according to package instructions until al dente, then drain and cool.
- Combine cooled pasta with chopped cucumbers, sliced olives, halved tomatoes, diced onion, and crumbled feta in a large bowl.
- Whisk together olive oil, lemon juice, oregano, salt, and pepper in a small bowl to make the dressing.
- Pour the dressing over the salad mixture and toss gently to coat.
- Chill in the refrigerator for 30 minutes before serving.
Notes
For extra crunch, add toasted pine nuts or sunflower seeds. Keep cucumbers separate if storing leftovers longer than a day to maintain crispness.
