Ingredients

  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 34 medium ripe bananas, mashed
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan.
  3. Cream together the softened butter and granulated sugar until fluffy.
  4. Add the eggs and mix until combined.
  5. Mash the bananas until smooth.
  6. Combine the mashed bananas with the butter mixture and vanilla extract.
  7. Sift together the flour, baking soda, and salt.
  8. Fold the dry ingredients into the wet mixture until just blended.
  9. Pour the batter into the prepared loaf pan.
  10. Bake for about 60 minutes, or until a toothpick comes out clean.
  11. Cool in the pan for 10-15 minutes, then transfer to a wire rack.
