Description

A comforting one-pot meal featuring a flavorful meat and vegetable filling topped with creamy mashed potatoes, all baked to perfection in a Dutch oven.


Ingredients

  • 1.5 lbs ground beef (or lamb)
  • 1 large onion, diced
  • 3 carrots, sliced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 2 tbsp tomato paste
  • 2 tbsp all-purpose flour
  • 1.5 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 2.5 lbs Yukon Gold potatoes, peeled and cubed
  • 4 tbsp butter
  • 0.5 cup sour cream
  • 0.5 cup shredded Parmesan or white cheddar
  • Salt and pepper to taste

Instructions

  1. Prepare the Potatoes: Boil the cubed Yukon Gold potatoes in salted water for about 15 minutes until fork-tender. Drain and mash, adding butter, sour cream, and half of the cheese. Season with salt and pepper.
  2. Cook the Meat Mixture: In a Dutch oven, preheat over medium heat. Add ground beef (or lamb) and cook until browned. Drain excess fat.
  3. Add Vegetables: Stir in diced onion and sliced carrots. Cook for 5-7 minutes until softened and onion is translucent.
  4. Flavor it Up: Add minced garlic, tomato paste, and flour. Cook for 2 minutes to eliminate the raw flour taste.
  5. Make it Saucy: Gradually pour in beef broth and Worcestershire sauce, adding dried thyme. Stir and let simmer for 5-10 minutes until thickened.
  6. Add Peas: Stir in frozen peas and heat through for a couple of minutes.
  7. Assemble the Pie: Spread the mashed potatoes over the meat mixture, sealing the edges well. Sprinkle remaining cheese on top.
  8. Bake to Perfection: Preheat oven to 400°F (200°C). Bake uncovered for about 20 minutes until golden and bubbling.
  9. Let it Rest: Take out of the oven and let rest for 5-10 minutes before serving.

Notes

You can prep the meat and vegetable filling ahead of time, and use leftover vegetables or meat for this recipe. Add different vegetables and seasonings as desired.
