Description

A delicious and easy one-dish meal featuring chicken, fragrant rice, and homemade tzatziki sauce, perfect for busy weeknights.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 ½ cups long-grain white rice, rinsed
  • 3 cups chicken broth
  • 1 medium red onion, sliced
  • 3 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried dill
  • ½ tsp ground cumin
  • Salt and black pepper, to taste
  • ½ cup plain Greek yogurt
  • ¼ cup grated cucumber, squeezed dry
  • 1 Tbsp lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a greased 9×13-inch baking dish with olive oil.
  3. Combine the rinsed rice with chicken broth, garlic, onion, remaining olive oil, oregano, dill, cumin, salt, and pepper in the dish.
  4. Add the chicken pieces on top of the rice mixture, partially submerging them.
  5. Cover with aluminum foil and bake for 35 to 45 minutes until rice is tender and chicken is cooked through.
  6. Make the tzatziki by mixing yogurt, cucumber, and lemon juice in a bowl and chill.
  7. Serve with a dollop of tzatziki sauce and garnish with fresh dill.

Notes

Feel free to customize the tzatziki with minced garlic or herbs, and use different types of rice for variation.
