Ingredients
For the Crêpes:

2 tbsp granulated sugar
1/4 tsp salt
1 1/4 cups milk
2 large eggs
2 tbsp unsalted butter, melted
1 tsp vanilla extract
1–2 tsp red food coloring (gel preferred)
For the Filling:
8 oz cream cheese, softened
1/2 cup powdered sugar
1/2 tsp vanilla extract
1/2 cup heavy cream, whipped
For Topping:
Fresh strawberries or raspberries
Chocolate shavings
Powdered sugar for dusting
Instructions
1. In a medium bowl, whisk together flour, cocoa powder, sugar, and salt.
2. In another bowl, whisk milk, eggs, melted butter, vanilla, and red food coloring until smooth.
3. Gradually whisk wet ingredients into dry until no lumps remain. Chill batter for 30 minutes.
4. Heat a nonstick skillet over medium heat and lightly grease with butter.
5. Pour 1/4 cup batter into the pan, swirling to coat the bottom evenly.
6. Cook for 1–2 minutes per side or until lightly set. Repeat with remaining batter.
7. For the filling, beat cream cheese, powdered sugar, and vanilla until smooth.
8. Fold in whipped cream to make it light and fluffy.
9. Spread filling onto each crêpe, roll or fold, and top with berries and chocolate shavings.
10. Dust with powdered sugar before serving.
