Ingredients

1 1/2 tsp baking powder

1/4 tsp salt

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

2 large eggs

2 tsp vanilla extract

1/2 cup milk

2 tbsp sour cream

Red or pink food coloring

Buttercream Frosting:

1 cup unsalted butter, softened

3 cups powdered sugar

2 tbsp heavy cream or milk

1 tsp vanilla extract

Pink or red food coloring

Decoration:

Paper straws or candy sticks

Heart-shaped candies or gummies for ‘arrow tips’

Mini marshmallows or candy hearts for ‘feathers’


Instructions

1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.

2. In a medium bowl, whisk together flour, baking powder, and salt.

3. In a large bowl, beat butter and sugar until light and fluffy.

4. Add eggs and vanilla extract; mix until combined.

5. Add the dry ingredients alternately with milk and sour cream, mixing until smooth.

6. Add a few drops of red or pink food coloring until desired shade is reached.

7. Divide the batter evenly among cupcake liners and bake for 18–20 minutes, or until a toothpick comes out clean.

8. Cool completely before frosting.

9. For the frosting, beat butter until creamy, then gradually add powdered sugar.

10. Add milk, vanilla, and food coloring; beat until fluffy.

11. Pipe frosting onto cupcakes and decorate with ‘Cupid’s arrows’ by inserting a paper straw through each cupcake, attaching a heart-shaped candy at one end and mini marshmallows or candy hearts at the other.

Notes

Use red velvet cupcake batter for a richer Valentine’s twist.

If you prefer chocolate, swap 1/4 cup of flour for cocoa powder.
