Description

Crockpot French Dip Sandwiches are a delicious and comforting dish perfect for gatherings or cozy family meals, featuring tender beef infused with rich flavors.


Ingredients

  • 34 lb beef roast (chuck or rump)
  • 2 cups beef broth, low sodium
  • 0.5 cup soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 4 cloves garlic, minced
  • 1 medium onion, sliced (optional)
  • 1 bay leaf
  • 68 hoagie or French rolls
  • 8 slices provolone or Swiss cheese

Instructions

  1. Prep the Beef: Start by placing the beef roast into the slow cooker. If you wish, you can leave the fat cap on for added flavor.
  2. Mix the Sauce: In a separate bowl, whisk together the beef broth, soy sauce, Worcestershire sauce, minced garlic, dried rosemary, and dried thyme until well combined.
  3. Combine in Slow Cooker: Pour the sauce mixture over the beef roast in the slow cooker. If you are using the onion, add the sliced onion and bay leaf as well.
  4. Cook the Beef: Cover the slow cooker with a lid and set it to cook on Low for 480–600 minutes or on High for 300–360 minutes. The longer you cook, the more tender the meat will be.
  5. Prepare the Beef for Sandwiches: Once cooked, remove the beef from the slow cooker. You can either thinly slice the beef against the grain or shred it using two forks. Return the meat to the slow cooker to keep it warm in the juices.
  6. Prep the Rolls: Preheat your broiler. Slice the hoagie or French rolls in half. Place them on a baking sheet and top with slices of provolone or Swiss cheese. Broil for 1–2 minutes or until the cheese is melted and the bread is toasted.
  7. Serve: Strain the cooking liquid into small bowls to create your au jus. Fill the rolls with the beef and serve with the warm au jus for dipping.

Notes

Leftover beef and broth can be stored in an airtight container in the refrigerator for up to 3-4 days or frozen for up to 3 months.
